Ocean Eight
Chief Winemaker: Mike Aylward

Located on the Mornington Peninsula, south on Melbourne in Victoria. This is one of the coolest growing regions in Australia. Vineyard sites were selected to produce the best Pinot noir, Chardonnay and Pinot Gris fruit possible. These varieties are the best suited to the climate and soil profiles of the Mornington Peninsula. 17 acres Pinot Noir, 7 acres Chardonnay, 15 acres Pinot Gris. Every vineyard process is by hand, beginning with cane pruning and following on to foliage management and bunch exposure! The fruit is hand-picked early in the ripening season. This ensures the wines will retain abundant natural acidity, vital for both the structure and the ageing potential of all wines. They target the cropping level below 2 ton per acre to concentrate fruit flavours.

The most important feature of the Winery underground barrel room. This ensures the wine will mature at the ideal temperature and humidity. 100% gravity fed Winery. This is the gentlest method for moving wine. Wine is stored in old barrels on heavy yeast lees! A very small proportion of new oak is used. Less than 5 %. At Capacity ‘Ocean Eight’ can produce 4,500 cases per year.
